Raspberry Dark Chocolate Coconut Clusters- GF, DF, Paleo, Vegan

Valentine’s Day has always, always been another excuse to make desserts and spread some love around work, the kids’ schools, the neighborhood, and, of course, at home. I know it’s one of those holidays that you either love or you don’t… I get it. Single, married, happily involved, or just loving your crazy cat lady life, I got you covered. Treat yourself, treat your spouse, or treat your friends. I found a healthy yet decadent recipe that has Valentine’s Day written all over it that you are going to want to make NOW, regardless of your relationship status or your feelings on Valentine’s Day.

This probably comes as no surprise, but I am a firm believer that food speaks a universal language of love. Memories are made over meals shared and prepared together, and there is something magical about giving and receiving delicious desserts homemade from the heart.

Luckily for me, my husband knows that food is always a sure way to win my heart. Flowers? Eh… I mean, they’re beautiful and smell amazing but they die so quickly… Jewelry? Minimal accessorizing going on here, let’s be honest… Date night at the best steakhouse in town for two? YES PLEASE! A new InstantPot or AirFryer? SOLD!  Plus, he is sweet enough to send me all sorts of recipes he thinks I would enjoy. This man just gets me… I am a lucky girl!

I am here to tell you that if you give these Raspberry Dark Chocolate Coconut Clusters out for Valentine’s Day that your recipients will be the ones saying they are lucky. These little gems are sweet, creamy and chewy all at once, and bursting with raspberry flavor. Raspberry paired with dark chocolate is, in my humble opinion, one of the best flavor combinations EVER. These no-bake clusters are gluten-free, dairy-free, and vegan with no refined sugar, so you don’t even have to feel guilty about eating three in one setting. I speak from experience. They taste so decadent that no one will ever guess that they are healthy… Did I mention that they are also no-bake? Healthy, delicious, and easy FOR THE WIN right here, friends.

Raspberry Dark Chocolate Coconut Clusters

  • Servings: 30-36 clusters

Raspberry Dark Chocolate Coconut Clusters

1 C freeze-dried raspberries

3 1/2 C unsweetened shredded coconut

1 C coconut cream (the thick, solid part of the can of coconut milk)

2/3 C pure maple syrup

1/3 C melted coconut oil

2 tsp vanilla

11.5 oz dark chocolate chips plus 1 tsp coconut oil

  • Line a large baking sheet with parchment paper and set aside.
  • Place dried raspberries in a large bowl and crush them. I used a potato masher and it worked well- a few slightly larger pieces are totally fine.
  • Add coconut, coconut cream, maple syrup, melted coconut oil, and vanilla to the crushed raspberries and mix well to combine.
  • Using a small or medium cookie scoop, drop the coconut mixture into clusters onto the lined baking sheet.
  • Refrigerate for at least 30 minutes or until the clusters are firm enough to be dipped into melted chocolate without falling apart.
  • Once the clusters are set up, place the dark chocolate chips in a microwave-safe bowl with the 1 teaspoon of coconut oil. Microwave in 30-second increments, stirring after each, until chocolate is completely melted and smooth.
  • Dip each cluster into the melted chocolate and place back onto the parchment lined baking sheet. Once each cluster has been dipped, scrape remaining melted chocolate into a small zip baggie and seal. Snip a tiny piece off the corner of the bag and drizzle the remaining chocolate over the top of each cluster.
  • Return to the fridge to allow chocolate to harden completely, then enjoy!
  • Store in an airtight container in the refrigerator.

Is it strange that I want to call these sexy? Can food be sexy? I just don’t know… but these make me want to say YES!

These would also be delicious with dried strawberries or blueberries… Looking forward to trying different variations of these in the future because they’re so incredibly easy and delicious.
