We live in a world that tells us, “Nothing tastes as good as skinny feels.” I’m gonna call bullshit on that one and state the obvious facts: 1- whoever said that hasn’t tasted this cake and 2- we need indulgence once in awhile. Life is too short to worry about trivial things… Don’t spend the better part of a day agonizing over whether or not to eat the cupcake at the birthday party or have the donut staring at you in the work break room. I mean, moderation is key to maintain a healthy balance, but for real…you need to treat yourself once in awhile!

And when you need that treat, or maybe you and your significant other BOTH need that treat because your children splatter painted the whole playroom and got slime on the couch again, these Melty Chocolate Lava Cakes for 2 are where it’s at. Coming together in less than 10 minutes in one bowl, it really doesn’t get much simpler than this.

Coconut oil and two kinds of chocolate chips are melted in the microwave till smooth, cooled slightly, and then all the remaining ingredients go straight into the same bowl. Mix until smooth, then pour into well-greased ramekins and bake at 450 for only 12 minutes. You’re only 22 minutes away from warm, melty Chocolate heaven…

Honestly, these are almost too simple. There’s a little danger here where we run the risk of teetering vicariously between the “beautiful balance of moderation” and the everyday excuse of “life is hard-let’s have melty chocolate cake” all the time because what’s 22 minutes and a few ingredients we always have on hand … slippery slope potential here, my friends. Fair warning.

Melty Chocolate Lava Cake for 2

1/3 C coconut oil

1/4 C dark chocolate chips

1/4 C semi sweet chocolate chips

2 eggs plus 1 egg yolk

1/4 C coconut sugar or sugar in the raw

1/4 C maple syrup

1/2 tsp vanilla

Dash of sea salt

1 tsp baking powder

1/2 tbsp cocoa powder

3 tbsp almond flour

1 tbsp tapioca flour

1 tsp coconut flour

  • Preheat oven to 450 degrees F. Grease two ramekins with coconut oil.
  • In a medium, microwave-safe bowl, melt coconut oil and both kinds chocolate chips in 30 second intervals until smooth.
  • Let cool slightly and add all remaining ingredients, mixing well as you go.
  • Divide evenly between prepared ramekins.
  • Bake for 12-14 minutes until barely set.
  • Let cool for 5 minutes, then carefully dig in!!!

You can totally add a heaping tablespoon of peanut butter to the mix to make this even more ridiculously delicious.
