Single Serve Apple Crisp

This post is going to be short and sweet and to the point because, well,  Single Serve Apple Crisp says it all. Happy Fall, y’all!

I can’t lie-  I have made this EVERY NIGHT this week… Don’t judge. It’s practically guilt free, anyways…  Fresh fruit, protein, healthy fats, whole grains… yep. Not even sorry.

Apple meets maple syrup, a dash of sweetener of your choice (I prefer Sugar in the Raw, but coconut sugar would work amazingly well, too), cinnamon, nutmeg, a hint of pink Himalayan sea salt, a splash of vanilla, and almond flour to pull it all together. Then, more almond flour, gluten-free old-fashioned oats, shredded unsweetened coconut, and pecans are mixed with maple syrup and coconut oil to form the deliciously crunchy topping. If you aren’t gluten-free, just sub your favorite all-purpose flour for the almond flour and you’re good to go. And of course, butter could be subbed for coconut oil, and any sugar you desire. This is extremely versatile and easy to adapt, so make it your own!

Single-Serve Apple Crisp

For the apple filling:

1 apple, sliced & diced to your liking

1 tsp Sugar in the Raw

1 tsp maple syrup

1 tsp almond flour

1/4 tsp cinnamon

Dash of nutmeg

Pinch of pink Himalayan Sea Salt

Splash of vanilla

For the crisp topping:

2 tbsp EACH chopped pecans, gluten-free old-fashioned oats, and almond flour

1 tbsp unsweetened shredded coconut

1 tsp coconut oil

1 tsp maple syrup

Cinnamon, to taste

  • Preheat oven to 400 degrees F. Grease a ramekin or small glass baking dish with coconut oil.
  • In a small bowl, mix together all filling ingredients. Pour into prepared dish.
  • In that same small bowl, mix together all topping ingredients until crumbly. Top apple filling with the crumble and lightly press.
  • Bake for 30-35 minutes, until bubbly and the top is golden brown.
  • Let cool until you can’t stand it anymore and dig in!
